Well done in making such a big change
Although you may not think this is a good idea it will help.
Go to see your doctor, like coming off of prescribed meds there is going to be some side affects for a short period. The doctor may prescribe something for anxiety or instead of stopping completely may say for you to cut down gradually over a short time.
I think the hypos may be stress induced, you body is going through a major transition.
Not in the same league but I remember giving up coffee, oh did I feel ill, cold sweats, aches but it was so much better after.

Classic withdrawal symptoms - disrupted normal sleep. When you come off addictive substances your brain reorganizes itself into your proper sleep pattern. I suspect you may be REM sleep deprived and you are making up for it with more REM sleeep. REM sleep is when you dream and is usually the stage of sleep you awake from if you are dreaming. People sometimes use cannabis to get a good deep sleep and like alcohol and benzos these substances increase NREM (deep sleep) and you have less REM sleep. Your body is just trying to get your sleep cycles in balance and it will eventually do this. Sleep science is fascinating and more is yet to be discovered.
