Okara powder is the most usual flour substitute for low carb cooking in Japan where low carb diet is quite popular. 100g contains 350kcal, carbs 6g, fibre 45g, fat 16g, protein 25g
I've been using this product for a year to make cookies, muffins and pancakes etc and love it. It does not raise my BS and is not as fatty as almond flour. It has the same texture as flour.
Sadly it doesn't seem to be sold in UK and needs to be ordered from Japan.
Here in Pakistan, we do not use its powder as flour but it is recommended to eat more often since it is considered to have a low glycemic index
Looking it up it seems to be a waste product from soya milk production and is mostly used for animal feed. Soya flour is readily available and presumably has similar properties.
No, Okara powder is from Soya Beans, this is dried Okra. Okra are long green seed pods sometimes called Ladies Fingers.
