Basically whatever your figure before eating is, the one 2hrs later will ideally be no more than 2 points higher, for example if you are 6 before then no more than 8 2hrs later. If the rise is more than 2 then the food you ate is not really suitable. That will depend entirely on what you have eaten and how your body reacts to it. If you eat say bread or cake your blood sugar will probably spike f you eat eggs and bacon it's more likely not too. Try it out, treat yourself as an experiment and see what helps you to control your blood sugar. It seems to vary a lot between individuals although a lot of us try to void most carbs thus not causing the spike at all. Then you don't need medication and your sugars stay in the normal range. The literature is wrong. It is what you eat, stress levels, exercise and another hundred reasons.
A spike of 2 after 2hrs is the maximum that we are looking for, obviously if it comes back down lower then that is better.I always thought it is supposed to be back to normal in 2 hours???? That is what literature says.

I also make them in muffin tins and bake in oven to make omelette muffins which are very portable.
