Omelettes

@BenluceOuf if you have a look at the dietdoctor.com website he has lots of free information on the low carb way of eating and also lots of recipies. He also does a two week low carb challenge where you are told exactly what to eat (this was my intro into low carbing) it may be worth getting a meter and doing the two week challenge so that you can see how this way of eating affects your blood sugars.

Poached eggs, salmon (room temp) on top. Sprinkle of cheese. Otherwise, bacon, spinach and scrambled or mix thereof. Chuck it all in, stir it up and you won't need lunch :) Snag as well for good measure
 
Hi, when you start testing it will help if you know what sort of figures you are looking for. Basically whatever your figure before eating is, the one 2hrs later will ideally be no more than 2 points higher, for example if you are 6 before then no more than 8 2hrs later. If the rise is more than 2 then the food you ate is not really suitable. Hope this helps and welcome to the forum, if you have any questions ask away however "daft" they may seem, we were all in your shoes once :).

I always thought it is supposed to be back to normal in 2 hours???? That is what literature says.

That will depend entirely on what you have eaten and how your body reacts to it. If you eat say bread or cake your blood sugar will probably spike f you eat eggs and bacon it's more likely not too. Try it out, treat yourself as an experiment and see what helps you to control your blood sugar. It seems to vary a lot between individuals although a lot of us try to void most carbs thus not causing the spike at all. Then you don't need medication and your sugars stay in the normal range. Or at least that's how it works for me.

A spike of 2 after 2hrs is the maximum that we are looking for, obviously if it comes back down lower then that is better.
 
HI, I was diagnosed in Jan this year too and I eat lots of omelettes, they are good for you. Whatever I put in them does not raise my BG readings. I have omelettes with cheese ham and tomato
Omelettes with mushrooms and veg anything you like really. Go onto the forum " What Have You Eaten Today" a good start for newbies try and test. :)
 
I like an omelette for my lunch...they are yummy
