First off, you're absolutely on the money there. Those results on an OGTT are non-diabetic. You have achieved what some other T2's have in reversing the symptoms of diabetes through weight loss and improved diet. Those numbers are wonderful. Great job and well done you!

Your fasting sugar levels of between 4-5mmol/l aren't too low at all, I think. Those are healthy non-diabetic numbers, which might typically stay in that range throughout the day. Since your blood glucose is dropping to between 3 and 4 after breakfast, it might indicate one or two things. Firstly, you are producing plenty of insulin, and it's working well. Secondly, the foods you are eating are very high in carbohydrate, which will create a large insulin response, and may result in your blood sugar drop later on.

i think you're right when you say that insulin resistance is probably something you have beaten. I imagine that if you ate some breakfast that demanded much less insulin, you'd find you numbers much more stable. Say, bacon and eggs, for example? My opinion is that increasing the carbs in your diet is absolutely the wrong thing to do. This will only succeed in greater fluctuations, increased insulin levels, weight gain and, ultimately insulin resistance. Back to square 1!

While you're right to say some poorly controlled long-term diabetics can suffer from renal damage, this is entirely a result of abnormal blood sugars, and nothing to do with the amount of protein in the diet. Reducing your carb intake is the rational, logical treatment for diabetes, as I think you've proven to yourself already.
