I keep reading about the reverse/cure/remission whatever you want to call it of type 2 & its seems to be based on how badly the liver/pancreas has been damaged in the first place, so how do you know how badly its damaged?

I was diagnosed in early feb this year, had a fasting level of 18mmol & a Ac1 of 12, no symptoms at all, 8 weeks in I vary between 6 - 8 mmol, next ac1 test due mid may,

I had a blood test around 4yrs ago & was told I was fine, it turns out after further digging my fasting level was 7.3 so I am guessing the diabetes started around about the 4yr mark

You don't know how badly it's damaged. There are tests that could give you indications, but they're expensive and won't change the way you have to treat your diabetes so no doctor would send you for them. I read into your post that you're hoping you could "cure" your diabetes if your Pancreas is reasonably ok. You won't. Sorry to be the bearer of this, but you need to accept you have this for life, until they find a new miracle cure. For now, what you can do is manage your diabetes through diet and exercise, and maybe a few drugs, down to near non-diabetic levels to minimise your risk of future complications.
Good luck!
