My wife and I got creative and did diabetic friendly pizza using the high protein rolls from lidl. I had the idea and worked her magic and came up with the finished recipe.
The base is a fresh tomato, chopped and mixed with chopped green pepper.
The cheese is mozzarella and Gouda topped with pepperoni.
It was delicious. I'll ask my wife to write up the full recipe and cooking instructions if anyone is interested.

Low carb high protein bread roll pizza
Ingredients
3 high protein low carbohydrate rolls from Lidl
Bruchetta style sauce:
4 large tomatoes roughly chopped
1 sweet pepper roughly chopped (any colour but I used green)
Tblspn olive oil (extra virgin)
Mixed herbs (a couple of pinches)
4 garlic cloves, finely chopped (we like lots of garlic so adjust to taste)
Salt & pepper (pinch to taste)
Topping:
1 buffalo mozzarella ball (or preferred style)
4 Gouda slices from Lidl (or preferred)
Pepperoni slices
Recipe:
Put olive oil in a pan
Place chopped garlic in pan with oil
Heat gently to ensure garlic doesn't burn for about 1 minute
Add chopped tomato and pepper
Add salt, pepper and mixed herbs to taste
Increase heat to medium and heat to simmer until tomatoes and peppers are soft and reduce tomato liquid down (about 3 a 5 minutes depending on amount of liquid)
Put aside to cool a little
Heat oven to 200c (not sure on gas or F equivalent)
Cut rolls in half
Drizzle a little extra virgin olive oil on each half (optional but tastes lovely)
Place on baking tray cut sides up
On each slice...
Lay Gouda slices on first
Rip bits of mozzarella and place evenly on top of Gouda slices keeping some back
Top with slices of pepperoni
Place rest of mozzarella on top of pepperoni
Place on middle shelf in oven until cheese has melted and rolls crisped slightly (about 5 minutes)
Serve with mixed salad leaves and extra virgin olive oil and lemon juice drizzle

They look lovely but when did you add the tomato pizza sauce you made did you spread it on the rolls first before the cheese
