I keep reading different variations on when you should test post dinner, am I looking for the spike at it's height or just to see if it is back to pre-dinner reading after two hours.

Tonight, pre dinner 5.0, Dinner was Roasted everything, chicken, cauliflower (Buffalo Bites), celery, red peppers, red onion, asparagus (3 spears) wrapped in a slice of bacon with dried chilli flakes and some garlic aioli on the side about 1.5 tbsp. The buffalo bites were mixed up with melted butter, chilli, paprika and some hot sauce.

I have just tested 1 hour after eating and my BG is now 6.1, I am going to test again at 1.5 hours and then again at 2.

If the height of my spike is at 60 mins or even 90 mins will it always be the same or will different foods affect the height of the spike. Normally walk straight after dinner but having to hold off so that I can do my testing so that may make a slight difference to my BG's.

Hope all that makes sense.

You've kind of answered your own question there.. I would guess that each time you eat something your reaction will be slightly different even to the same things. Our bodies aren't calibrated scientific instruments.. going for a walk can effect it,.. how much sleep you had the night before can effect it..I would even hazard a guess that how fast you ate it might have an impact as well. But the main thing is to look for are trends.. lower blood sugars and lower rises will be good. As I'm sure you know meters are only "accurate" to +/- 15% so even your meter readings aren't accurate enough to look for the info you want... if only they were I'd be a much happier bunny..

Update my results were as follows
5.0 Before Dinner
6.1 1 hours post dinner
6.4 1.5 hours post dinner
5.7 2 hours post dinner

Quite pleased with that, counting that as a good meal even though I haven't quite dropped back to 5.0.

It was lovely, however, now I am just about to go to sleep and have tested again. When I got back from my walk I had a snack of sugar free jelly mixed with mascarpone cheese, only a small amount but my this was a couple of hours or so ago. My BG is now 7.1, is this due to the jelly or is it normal to start rising again.

That sounds a bit odd.. did you wash your hands first? Did the sugar free jelly have sweeteners.. they may be causing a rise even though no sugar.

Sugar free jelly probably does have sweeteners and tbh I should have diluted the jelly a little more than I did, I only added 10floz of water to the jelly crystals. I did't wash my hands but I did brush my teeth and then rinse the toothbrush out so they did get wet but not soaped.
