I also do my test 2 hours after finishing my meal.

I do mine 2 hrs from when I start eating primarily because my pump alarms 2 hrs after doing a bolus to remind me to test. I bolus before food (in he main) . We're all different.

I was always told to retest 2 hours after finishing a meal which is what Ive always done, I am not that concerned with a 1 hour peak in levels as I believe that that is natural and even non diabetics get this but the 2 hour mark is when I like to see my bloods returning towards base level, I dont always manage it but I take a relaxed view of this as my overall HbA1c is good.
