Preheat grill to high.</p><p>2. Cut the aubergines into diagonal slices about 2cm thick. Score on both sides and brush with</p><p>oil. Grill on a tray for 20 minutes, turning halfway through.</p><p>3. Scatter the goat's cheese and lemon zest over the aubergines. Briefly grill until golden.</p><p>4. Chop the tomatoes and mix with the lemon juice and garlic. Spread the chick peas over a</p><p>large serving plate and mash a little with the back of a fork.</p><p>5. Spoon the dressing over the chickpeas. Top with the aubergines and half the mint. Toss</p><p>together.
