potatoes

This is a bit of a silly one but does anyone know if I should eat potatoes with or without skins.
I am doing the low carb diet but potatoes are the bit I really miss so have one or 2 new potatoes about 2 - 3 times a week.

I do peel them but after spending many years eating potatoes with skins feel I am wasting the best bit

Really what is the best way to eat and which type of potato is best

I have just a couple of baby new pots boiled in their skins. Seems to give me best results from a BG point of view. Sainsburys ones are 14 gram carbs per 100.
 
I had a portion of chips the other night and not much of a spike at all ... I don't know if it's the fat slowing down the absorption?

TBH it's good news since it seems I can't have bread at all :sick:
 
It is generally accepted that it is better to eat your new potatoes with the skin as peeling them would make the potato easier to digest so hitting your blood stream quicker. So enjoy those new potatoes with their skin on :thumbup:
 
And don't forget the Fresh mint when you boil 'em!
 
I think the skins are a good source of fibre
 
In fact, eat the skins and throw the rest away ;-)

Interesting one.
If you bake an old potato then scoop out all the middle and discard or give to someone who can eat it without side effects, then fill the middle with a mixture of bacon and cheese and spices of choice, then that sounds like quite a reasonable low carb high fat high fibre snack

They're called loaded potato skins,I still have them occasionally,usually filled with monterey Jack cheese and red leicester,chopped chives or spring onion and smoked Bacon Lardons and I have a little salad and a big dollop of sour cream on the side. Yummy!
