Pre or post pricking?

So Mr B decides to surprise me with a very novel lunch at home, pike caviar and toast. I pricked with Novo 1 unit before but it turned out, unsurprisingly, that I got the amount of bread I was going to eat wrong, I ate more and really should have known I was going to be a pig. (27g carbs)

So my question, which I'm really not sure how to frame is, does it make any difference injecting insufficient before and readdressing 2 hours after?
I started eating @4.7, had 1 unit Novosluggy 15 mins before
2hrs later a stonking 11.1 and thwacked it with another 2 units

I'm still not very good at this diabetic lark, only 15 months in so usually don't eat carbs so I don't need to do the maths.

The caviar, toast and fizz was an extra celebration for Mr B's birthday and was a blast!!:hilarious:
 
If it’s any help, I dose for what I’m planning to eat, and if it’s more I’ll dose the extra as soon as the meal is over rather than wait for a sky high reading two hours after which is harder to correct as I get a bit insulin resistant when I go high.
 
I have no problem having a top up insulin dose once I know what I have eaten.
This is something I do whenever I eat out because I don’t know portion sizes or whether I will like it until I have seen the plate and eaten it.

I'm really sensitive to insulin so if I'm not sure of carb content (eating out) or how my body will react to the food then I'll do a cautious dose 20 mins before and a 2nd dose a bit later.
