Prediabetic but not typical

Hi. I am a newbie from New Zealand. Four years ago I discovered accidentally that I was having very high blood sugar spikes after modest carbohydrate meals ( up to 12 mmol/l). I was suffering from several symptoms: unexplained weight loss ( from 46 kg to 40 kg), frequent night time urination ( 4-6 times every night), swollen fingers and high blood pressure after meals. GP could not find anything wrong but because my mother was diabetic and diagnosed at my age (55) I bought a glucose meter and discovered the spikes myself. I immediately cut off all sugar ( used to consume heaps but still lost weight), started healthier diet ( I am vegetarian though so healthy carbs, but no potatoes, rice and very little grains or fruit) and have been exercising every day ( minimum 20 min on the exercycle but also physically active otherwise). After four years my bg has not improved. Even half a piece of bread ( approx. 10 g carbs) will spike my bg over 8. Fasting bg has gone from 5.6-5.8 to 6.1- 6.5. Bg often does not come below 6.5-7 for many hours ( still high four hours after low carb dinner). My GP is sympathetic but does not know much and two endocrinologists refused to take me seriously because my HbA1c is still normal (I believe it is normal because of all the efforts I make to stop the spikes) and because I am not overweight. Very dismissive, patronising and unhelpful. Am I in a gradual decline from prediabetic to diabetic and what type ? Considering chronic issue with weight loss ( really struggling to keep my weight of 43 kg at the moment) , is it possible I am simply insulin defficient although I did not test positive fror LADA antibodies. Is there anything else I can do? I have read loads of research and do get the impression that my blood sugar levels could cause gradual damage. The hardest thing is that medical professionals don't believe me and refuse to even answer legitimate questions. Apparently I should just ignore my blood sugar until my HbA1c is in a diabetic range. This does not seem like good advise to me.
 
Hi there and welcome. May I ask what your last HbA1c reading was?
 
Thanks for replying. Last HbA1c was 34 , but the result came with a message that they had changed the "measuring platform" and that results would now be 4 mmol/mol lower than on the previous platform. My previous result was 37 so more or less unchanged then.
