I saw a receipes on two sleevers for seeded crackers made with psyllium gum I have got all the seeds to make crackers but it says on psyllium powder that you must drink plenty of water as it swells and could cause choking. As I haven't used it before just wondered is it ok when it is made into crackers would appreciate your help here. Thank you in advance.

As I have never used this substance before I simply want to know if the warning applies to the raw material or also when crackers are made as it says you need to drink plenty of water with the product as other wise it causes choking. If it does apply to crackers I will be throwing it away.

I have used psyllium many times, as a powder stirred into water and drunk, and in crackers and other baking.
Never had a problem.

Obviously I cannot speak for the manufacturers who put that warning on the packet, so if you are worried, I would contact them directly and ask for an explanation.

However, I suspect that the warning is there to prevent someone doing something idiotic like spooning the dry psyllium into their mouths, were it will immediately start to absorb saliva and swell up. Whereas a pinch of psyllium mixed into a cracker, with cheese or pate (or whatever) on top, chewed well and swallowed in a grownup fashion will cause no problem at all.

If you want to see what happens to pysllium when it contacts water, then take a glass of water, tip a teaspoonful of the powder into it, stir and wait for a couple of minutes. All it does is swell up and form a gel.

I have psyllium husk powder in my low carb coconut porridge every day and it’s never been a problem. I do have a coffee and a vitamin drink with it though. But I think it’s to prevent against the scenario that Brunnaria cites!

I haven't made those crackers, but two sleevers does have some fantastic recipes on her site; especially if you have an Instant Pot.
