Having normal fasting levels before eating, having hypoglycaemic episodes around three hours and the symptoms as your blood glucose levels are going up and down, is absolutely classic RH. To explain, when eating carbs, your background insulin and first phase insulin response is not at normal levels, the glucose derived from the food, will spike you very quickly. This is the trigger for a secondary insulin phase called an overshoot. This is what drives blood levels down into hypoglycaemia. How the autoimmunity came about, I haven't got a clue! Keep safe, best wishes.
