Receipe for bread

I am looking for a receipe for bread, Although I don't eat all that much of it Im now finding that I'd kill for a piece of toast. I've looked through some of the topics but haven't found a receipe yet, unless of course I've missed one, can anyone out there help?

I make my own but many on here eat a slice or two of Burgen Soy and sunflower bread. Most supermarkets stock it.

My recipe is about 40% Lidl Rye Bread mix, 30% Wheat gluten (from Low carb store) 20% Bran and 10% seeds like flax, sunflower, millet, and so on. Two heaped tsps of dry yeast and one heaped tsp of sugar. I throw it all in the breadmaker and out comes a good loaf, not to bad on carbs either. I add oil to keep it a bit soft.

Yes I'd noticed some folk used Burgen bread, so might have a look at that also.

getting to grips with this low carb thing is quite tricky. Breakfasts are the worst, as I am a cereal eater, it was my favourite meal of the day and now Im having to cut it out :x , and I feel if I have to look at another egg I'll go loopy.

I have been told that my description of toast and marmite is food porn. I miss toast. But I can't stop at one slice of toast and marmite and so avoid it altogether.

And after 3 years of low carbing I have still not found a decent alterntive to evenly golden brown crusty white farmhouse, dripping with butter and a very thin scraping of marmite. The low carb breads don't taste the same and they don't toast the same.

That said, I'm about to try a coconut flour based loaf... I will feedback once I have done it, but I'm not holding my breath. I have never understood the obsession with finding a low carb alterntive bread. I have tried lots of "bread" recipies and have not been impressed - the best tho is an almond based loaf with strong cheddar cheese and carraway and rosemary and black pepper, which is nice to chew with soup. But it does not toast.
 
What I have tried recently is chop/split 15 almonds, take 2 teaspoons of rolled oats, throw it on a dry frying pan, keep stirring until it starts roasting just a bit. Immidiately remove. Add 2-3 drops of almond drops, stir. I have this on low-carb greek yoghurt with a bit of added water (tablespoon or so) and a drop of Stevia and it lasts me two days but gives that sorta crunchy feel that I was missing. It's not too bad on the carb side, I'd say 3g and it saves me from the eggs when I've had enough of them.

I haven't been too lucky with berries myself yet, so can't do that, but this is a fair compromise to me.

If you're willing to accept the few g and also check for yourself on the labels to make sure, then maybe it would work for you. Can for that matter leave out the oats but it's a really small amount in the end and I do like the combined taste of the two ingredients.

This is the best low carb bread, it behaves like the bread we are used to, it toasts beautifully, enjoyed by all, you dont have to be low carb to enjoy it, you can have fried bread with your breakfast, make a decent sarnie with it, toast it.

The recipe I use, I just omit the herbs.


Nutritional Information: If you cut this loaf into 12 thick slices each slice has less than 1 gram of effective carbohydrate, 5 grams fibre, 6 grams protein, and 185 calories.

Flax meal loaf. Weight of cooked loaf 742 grams.

Ingredients.

2 cups of ground flax seeds (280 grams)
5 eggs
Half a cup of water
One third of a cup of liquid butter
One table spoon of baking powder
One tea spoon of salt
Added mixed dried herbs

Method

Place the eggs in a mixing bowl and whisk. Add the butter and water. Place the flax in another bowl and add baking powder, salt and herbs and mix.… Add the wet mix to the dry mix and mix thoroughly. Place the mix into a non stick bread tin and bake at gas mark 7 for 55 minutes, electric fan oven 200c for 55 minutes. All ovens are different, so you will have to experiment a bit. Add some walnuts and sun dried toms into the mix and you have meal in itself. Just add that lovely butter. The beauty of this bread is that it is easy to make, and requires no cooking skills or special equipment.
