Hiya thought I would post a recipe I have for all those with greenhouses that have a glut of green toms - not a gardener so maybe I am too late in the year - I made this back in July - I don't know the carb content for those who are strict about the carbs but as it makes 5lbs of chutney and you only need a couple of teaspoons at most an educated guess tells me its low
I have to add it's a recipe I found online but I have altered it a bit to my own taste
Green Tomato & Apple Chutney (no added sugar)
. 1lb cooking apples peeled, cored and chopped
· 2lb green tomatoes chopped
· 1lb of red onion chopped
· 5oz dried apricots or dates chopped
· 3oz sultanas
· 300ml of water
· 1teaspoon ground ginger
· 2teaspoon of curry powder or chilli powder - this is optional but I think it really needs it - if your like me and like things fiery you can add more to your own taste
· 500ml of cider vinegar
1. In a small pan simmer the sultanas and apricots/dates in the water until soft
2. Transfer to a large pan and add all the other ingredients into the pan
3. Bring to the boil and then simmer until everything is soft and the chutney has thickened
4. Spoon into hot jars and seal
5. Leave at least 4 weeks for it to mature before using
It's great with meats & cheese and its nice to have something to perk things up a bit - my dad who is also T2 loved it - we have had a jar each and have a jar each left for Christmas when it will be even more matured as the longer you leave it the better it gets - strangely food doesn't get chance to hang around much in my house so had to hide it away :lol:
