I use half fat creme fresh - heat it up to very hot but not bubbling - the creme freshe is heat stable but if you boil it the cheese will split - remove from heat and add as much grated chees as you like season to taste - I also add a pinch of grated nutmeg and loads of black pepper
Sounds yummy going to do it now we eat at 5pm most days
