I don't particularly want bread of any kind, I do not want to slide back into the habit of having bread as just a 'filler'. I must admit to having missed garden peas with my roast, though.

No problem having extra cheese! I would have a bath in the stuff if I could.Forget the white bread - anything like that could start cravings and hunger.
How about eating extra cheese or berries with double cream. If you want more carbs then have something healthy..... more veg with butter on or nuts.

I have resisted weighing foods as I know I would become obsessed and besides, it mostly falls to my family to serve up meals as from a sitting position trying to handle hot pots and pans just isn't safe. As to extra protein, will I not be putting strain on my kidneys to increase it?
