I need to add more low carb vegetables to my diet and have recently been dabbling with sauerkraut. The various packets of sauerkraut I've tried so far state the carb content is between 2 and 4 grammes per 100 g yet it has spiked me quite badly on 4 separate occasions. Raw cabbage does not impact me in the same way as sauerkraut does. Any one have any theories on this or similar experiences ? Could it be the vinegar or fermentation process ?

I haven't had sauerkraut for ages!! My mouth is watering now, actually.......

Anyway, playing back on my memory, some of them can be quite sweet; almost as if a sweetened vinegar has been used. Clicking through the various options in the myfitnesspal database, there are widely varying recordings for both calories and carbs. Obviously, if you are going by the manufacturer's information, you can't do much more than that, unless you make it yourself.

Perhaps try a smaller portion?

After all, what else are you going to eat with your schaufele at the Weihnachstmarkt?
 
I heard somewhere on here that something vinegary with a meal can bring bgs down..Aldi do a nice low carb sauerkraut..its very low in sugar. I can't remember the name. Just take a peep at the nutri info
 
Thanks for all the answers, I am already supposedly eating a low carb version of sauerkraut. The carb content is 0.8 gram of Carbs per 100 g but It is spiking my B/S even with bolus. The obvious solution is not to eat it but I am confused what can be causing the spike. It is a highly convenient food with zero preparation required ideal for the work place.
