Sausage & Egg Muffins

Just made these, will have them for breakfast tomorrow. They are AMAZING!!

400g sausages
12 eggs
100g phillidelphia
120ml water
150g cheddar cheese
Muffin cases

Take the sausage meat out of their skins, crumble in a frying pan. Fry until browned. Meanwhile mix the eggs and the philly. It will go a bit lumpy, but dont worry it doesn't matter. Mix the water in. When the sausage meat is browned put it in the bottom of the muffin case. Pour over the eggs and sprinkle over the cheese. Bake on 180 for 30 mins.
 
Made them yesturday they r lovely n didnt spike BS as bad. 12.6 up to 15.1 after breaky normally has me 17.5-19.5 so pleased over all. Had mine with a bit of cottage cheese but son had one with red sauce said it was nice so ill try that 2moz. I had 2 do only 2g carbs in total plus cottage cheese 4g

Is your recipe from The Low Carb Gourmet by Karen Barnaby? Mine was, but I didn't have cream, so put the philly in!
 
Yes it is. Its a great book going to try other things. Had tofu fir first time ever 2nite n didnt dpike BS up invto high teens yay thats a first. So going yo use it in some of the ideas in the book i think. Dont likevits taste on ownvtho so has to b in things lol loq carb diet may have just got better :-)

Yeah I fancy a few of the tofu recipes. I'd like to have a go at the Linseed Porridge. Have you tried it? Cauli mash was the best recipe from there, goes with everything.
 
I have made up the porridge mix and was having it every second day. I wouldn't approach it thinking it will be like porridge but more like a wheaty tasting breakfast filler upper! I have it with a couple of tablespoons of cream and some blueberries and a smirr of sweetener. I've OD'd a bit on it so am having a break (mostly because I was having it when I was unwell after surgery a few weeks ago and the association has stuck....well that and the fact that I'm going through an alternative sausages and omelettes stage). :lol:

It's easy to mix up and once it's done it stays fresh in a sealed bag or container for quite a while (flaxseed being one of the first things that would go off - not sure mine sticks around long enough for that to happen). I've also had it for supper when hungry a few times too and my BGs seem to love it (in a good low way).
 
Yes i tried the porridge mix but it spiked BS :-( most food does. Not my tea has relased carbs or something slower as only had a cup of decaff coffee with soya milk at 8pm n bedtime BS 18.4!!!!! How from 11.3 2 hrs after tea??? The soon they sort right meds of the better me thinks. Yes im over weight but lost 1st in 3 wks yet BS not changed. Crasy they give headaches blurred vision n tummy pain along with odd feeling in hand n feet :'(
Hate this when i eat it spikes if i dont it does. Im only 34 n my life is awful n mybpoor son gets my mood swings as im a single mum. Bless him tho takes it all in his stride. Then theres the fact ive bn on sick paid from work 4 wks now so moneys tight 2
