What percentage of carbs to protein do people find works best to keep sugars down but not cause attack of pancreatitis

I'm not sure I understand what you're asking @slikwipman.

T1's tend to have their own individual limits regarding how many grams of carbs can be consumed in one go/one day - without causing BG management issues. This is something which can only be worked out by the individual through rigorous testing, carb counting and record keeping.

With regards to pancreatitis - I'm afraid that I cannot offer any solid advice. As far as I'm aware though, fat is the main macro-nutrient that should be avoided for those with pancreatitis, gall bladder issues, etc.
 
Not sure what I mean myself, I've been trying to find a good diet that suits for years, have found that veg causes problems unless I cook it to mush n salads are same so have to watch how much I eat, I count carbs but never got told a limit, a normal meal will be about 40-50,
