I’m surprised that your uncle is being or on insulin and empagiflozin as that’s a rather strong load. if already on this is he testing to see what his BG are daily. be aware the flozin will increase urine production and cause UTIs and Yeast infections unless he’s reduced his carb load. my mother was put on insulin snd her numbers went crazy all the time and what did the docs do increase her insulin. She was on huge amounts at the end and it wasn’t working. It killed her in the end through a diabetic coma and it induced a massive stroke at 70 I was dx at the same age as her at 50, 2017 my numbers went to 106 and they wanted me on insulin tried sending me to the hospital specialists I refused as I felt that insulin would rot me from the inside out. I went back to low carbing to be told I’ll be on insulin in the future regardless thanks Nurse but I’ve not in the past 4 years and I’ve tried to stay under 100g of carbs a day. I haven’t fallen of the wagon but do have treats now and again.
