Slow releasing carbs

We are in the world of Tyoe 1 Diabetes for only 3 weeks now, as our 13 year was recently diagnosed.
We have been advised to treat low BG levels, our daughter should eat some Haribo ****** Bears (we live in Germany, but I guess they would be similar to Jelly Babies), this is to cause a quick rise in BG.
Additionally she eat slow release carbs, can anyone recommend any (tasty enough for a 13 year old, especially for late evening/night time)?

Perhaps some peanut butter on a slice of wholegrain toast, alternately oat crackers with a slice of cheese on top.
