Have you read some of the old posts with CKD they say they got better function on a lchf diet (your dietitian will pull its hair out) but low/moderate protein, low carb, high fat has worked for some kidney guys

SJC i agree with jack here. I have been dealing with top renal consultants for the last 16 year and none of them would put you as stage 3 with one kidney. They might say you had a slight impairment and to keep an eye on you but that is all. Stop scaring yourselfAsk your dr, I would think you are treated with kit gloves because you have only one. I wouldn't say you had CKD. I would say you have one perfectly working kidney with normal life expectancy

I think after 16 years you would have a clue or 3Jack my kidneys aren't straight forward. Yes I am stage 4 CKD but the causes for it effect what I eat.
I have bi-lateral renal tubular acidosis. This has caused nephrocalcinosis and CKD. I am quiet the expert at looking after my kidneys. As all the consultants thought they would of failed years ago.
I am lucky that my kidney disorder is so rare I have been privy to the top consultants in my area and been used as a teaching aid so I have been very much a part of my own care. I intend to take control of my diabetes in the same way. I have three kids and plan to be around for a long time
We all know you are sh*t scared and have compassion. I know I'd be freaked if I was told... You have cancer and we're cutting your kidney out.. You don't overcome that in a week.

60-70g of protein sounds a good amount to rebuild you.
Carbs 250g if you can do it with your BG
Have nothing low fat, dairy, butter no marge
Olive oil and coconut oil are both very healthy
