Hey all!

I've just got a fully automatic ice cream maker and made my first batch of ice cream in it. Not too adventurous, just vanilla, but it was absolutely lovely. I never thought ice cream could make me so happy! I didn't even care that much about ice cream until I became diabetic and couldn't have it. Now I crave ice cream as soon as the sun comes out, but it was such a faff making it by hand. This machine is amazing! I feel many ice cream experiments coming in the days ahead!

Ice-cream making's going well - I will soon be looking for tips in the weight loss section at the rate I'm going :lol:

AliH - I've made a number of ice creams now, but the vanilla one I originally posted about was:

200ml Single cream
400ml Double cream
15g Splenda
1 tsp vanilla extract
2 Tbs daVinci sugar-free vanilla syrup

Mixed it all together with a stick blender and poured it in the ice cream maker for 40 minutes - delicious! Made about 10 portions at about 3g carb per portion, so I've now halved the ingredients to make less (and hopefully control my urge to eat it all :lol: )

The one I've just made (and eaten):

100ml Single cream
200ml Double cream
12g Splenda
1 tsp peppermint extract
50g 85% dark chocolate

Mix everything except the chocolate together with a stick blender. Pour it in the ice cream maker for about 25 minutes. Chop the chocolate into small chunks. Once the ice cream is done, take it out of the ice cream maker and put it in a freezer tub. Mix the chocolate through it and put it in the freezer - or eat it :lol: This is my favourite so far! It has about 5.5g carb per portion, so not too bad, but does mean I have to use a little insulin to cover, so can only really eat this one with a meal when I'm jabbing anyway. I expect most Type 2s would get away without this raising the BGs, though.

I've been making them without egg as I'm not sure eating raw egg is a good idea for diabetics - but I might be wrong about that! My next experiments will involve making a custard-style ice cream - I'll have to see how easy it is to cook the custard without it seperating. Wish I'd bought this ages ago - I think I'm addicted :lol:

Smidge, try blending 100 grams raspberries and swapping for 100 mls of the single cream. Leave out the choc and extracts. Tastes good!

You can buy flavoured stevia drops by BetterStevia and Wisdom Natural, in lots of different flavours. They might be ideal for icecream!

Well, I managed to put some of the mint ice cream into the freezer and leave it alone :lol: I'll give the raspberry ice cream a go, Grazer - cutting back the cream a bit and replacing it with raspberries sounds quite virtuous :angel: Do you put the raspberries in whole or do you puree them?

Thanks for the tip on flavoured Stevia drops, Julia - I could do with reducing the Splenda as there's quite a bit of carb in it, so I'll look out for the Stevia - it sounds ideal. The machine is a make I hadn't heard of - a company called Andrew James. I would have loved the Gaggia, but it was just too expensive. The Andrew James ones were on offer at Amazon - still expensive, but considerably cheaper than similar ones. It had a pretty good review at Which, so I took a chance and it's great.
