Those meals sound perfect to me. We were all indoctrinated about how fat is bad for us, but the tide has turned. We have to get rid of the brainwash and embrace it. There is no need to go overboard with it if you don't want to, and you are doing the right thing in measuring everything initially. You will soon get used to judging amounts and portion sizes on a plate. It is all a matter of balance - the lower your carbs the more fats you need to make up the lost energy to avoid fatigue. Your body will soon convert to burning fat rather than glucose and you will feel the benefits.
Oily fish is the best food, plenty of salmon, tuna, mackerel etc. Don't forget nuts (in moderation), olive oil, and some berries if you want fruit. And if you like a drink, a glass of red wine is very medicinal. It is full of heart healthy antioxidants. Just watch the calories from the wine though.
