Hi Everyone :D
I’m a newbie to this forum, my name is Caitlin, I’m 19 and I've had T1 for 11 years now ( :( ). I’m brand new to the low-carb way of life and after reading Dr Bernstein and a lot of the success stories on this forum I have decided to give it a go as I have never been able to achieve an Hba1c under the 7% mark (and the 7.0% was mainly due to a lot of hypos).

So I was just wondering if anyone has a low-carb alternative to the standard ‘bread and milk’ weekly shopping list? Or do you just plan different meals each week and buy according to that?

Good question! Normally I have linseed and ground almond porridge for breakfast, salad for lunch and something with either cauliflower rice, mashed cauliflower or super noodles. I usually have nuts for snacking or cottage cheese.

Cauliflower is a staple for me though - surprisingly versatile. To make the rice, cut the cauliflower into florets and grate. I use the grater on a food processor as it's faster. Then fry in a bit of oil for a couple of mins.

For the mash, cut the florets and stalk, boil until tender, around 20 mins. Drain in a colander, use the bottom of a bowl to press excess water out. Put the cauli in a food processor and blend until smooth.

Cauli is full of vitamin C and has anti-carcinogenic compounds in.

Super noodles are made of plant fibre and water. Substitute them for pasta. I get mine from holland and Barrett.

Otherwise for dinner, just stock up on veg and replace the carb portion with extra veg.
