I want to start testing effects of carbs on my bg.......2:00pm today took bg reading 5.5....ate small slice of white toasted bread with butter and coffee with full cream. 2 hours later tested bg again 5.7. Is this the way to test carb affect? I'm still unsure what I've learned and how to proceed.

With those readings you have learnt you do not get a massive 2 hour spike. Check again at 3 hours as the fat in the butter and cream will slow the absorption of the carbs
Also rerun the test twice more, never make decisions based on one set of results
