Stomach problems & Digestion

Hi guys, I'm finding certain food types are giving me delayed BGL spikes (4hr instead of 2). Haven't figured out which yet, as I'm new, but I'm honing in on it I think. The only things I'm certain work in time with my bolus are the simple carbs/sugars - rice, white bread, lollies, soft drinks. Otherwise I dip down then rise back up.

I know fat/GI plays a part, but the dietitian was surprised at some of the patterns and I'm wondering if my stomach/gut could be to blame.

I have anti-parietal cell antibodies (kill the parietal cells which are: responsible for b12 absorption & contribute to stomach acid production).
I also have general gastritis/pancolitis which is inflammation/damage on top of the APCA.

I have gastroparesis caused by long term poor control leading to nerve damage in my stomach. Fatty foods slow digestion and as mine is already slow sometimes the food doesn't go down at all and has to come back up!! TMI sorry!. Have you been checked for this?
