Stress and High Blood Sugar

I know I'm always asking questions, but this disease seems to spur a lot of questions!

Over the last week, I've been having a problem with increase readings on an afternoon. I eat a fairly light lunch, usually tuna/chicken/cheese with a bit of salad or some veg from the previous night.
I had started to get excellent readings all of the time, and really had to fight for that. For a month I didn't get above a 7, and it was usually between 4.5 and 5.5. I was so pleased and put it down to being active and losing 50lbs.
But things have changed. I have encountered some unavoidable stress at work - real nasty stuff not directly involving me, but the proverbial hit the fan this week and I'm picking up the fallout in the form of extra work, having to sort out big problems, and generally spending afternoons getting my head into a spin. It's going to get worse before it gets better. Actually, it's going to get much worse for the next month.
So, it's no real surprise that my blood sugar is getting into the mid-teens around 4pm every day (3 hours after lunch).
After work, my blood sugar goes back down nicely, so I'm confident that the issue is caused by the extra stress!

I don't have the kind of job where I can leave and go for a quick walk, but I have been trying to go for a lunchtime walk to try and pre-empt the rise, but I don't know what else to do.
Any ideas on how to cope with this? I don't know how to not let myself get stressed!
