So for the second time this year my husband has had to close the business for covid .
We are both type 2 and originally did keto which dropped to A1c, but I am sensitive to very high fat foods and had to stop as it makes me very ill with vomiting .
Money is a problem now as we still have to pay for the business premises while not trading .
We are getting help from the government but all the bills still have to be paid and so we have to watch the pennies.
I am finding it so hard to know what to eat that wont cost a bomb .
Does anyone have any ideas for medium carb foods ?

I am going for my A1c on Monday I know it won't be as good because i haven't looked after my eating for months but have walked around five miles a day . Maybe that will make a difference, know my luck it wont .
I think so , not low carb like keto because going low carb needs high fat so I understand . I could try 130 g a dayHi there, can you define 'medium' for us, it can mean different things to different people. The above post I would say was keto. My idea of a medium carb day is around 130g which others may say was low. x

We do a lot of slow cook dishes which you can stuff with vegetables to bulk them out. How do beans impact your BG lebel? Chilli can be made in bulk and adding kidney and baked beans means it goes further.
Tonight we had butternut squash, cabbage and chops - yummy. Tomorrow a higher carb day with squash risotto.
Roast chicken gets us 3 days of meals - lots of veg again.
