stuck for food ideas, medium carb

So for the second time this year my husband has had to close the business for covid .

We are both type 2 and originally did keto which dropped to A1c, but I am sensitive to very high fat foods and had to stop as it makes me very ill with vomiting .

Money is a problem now as we still have to pay for the business premises while not trading .
We are getting help from the government but all the bills still have to be paid and so we have to watch the pennies.
I am finding it so hard to know what to eat that wont cost a bomb .

Does anyone have any ideas for medium carb foods ?

I am going for my A1c on Monday I know it won't be as good because i haven't looked after my eating for months but have walked around five miles a day . Maybe that will make a difference, know my luck it wont .
 
Cheaper cuts of meat (mince, pork shoulder, whole chicken), slow cooked, eggs, fresh, in season about ground veg, frozen veg, Cook in bulk if you can and eat over several days or freeze. Hit your local market if possible and the butchers, they're usually less expensive than the supermarket

Hi there, can you define 'medium' for us, it can mean different things to different people. The above post I would say was keto. My idea of a medium carb day is around 130g which others may say was low. x

I think so , not low carb like keto because going low carb needs high fat so I understand . I could try 130 g a day

Hi there, I wasn't suggesting you have 130g a day as it is probably best for you to make that decision and then come back to us? Some find that is too high for them if it's their glucose levels that they are trying to reduce etc. Anyway, I sometimes have a slice of toast (20 carbs) or a yogurt (10 carbs) or a bag of crisps as a snack (15carbs), or food wise I just add a bowlful of roasted root vegetables. Small, lowish carb items to supplement my usually low carb approach. x

How about things like casseroles? They're lovely, warm and comforting this time of year?

Have a chat with your butcher about cheaper cuts of meat. Brown your meat in a frying pan/skillet, then deglaze the pan with a little stock, made with a stock cube is fine, the put it in the slow cooker, along with a load of veg - onion, carrots, swede (potatoes if you can cope with them), and some spices, then add a it more stock, then slow cook for much of the day. If you don't have a slow cooker, put it in a casserole and cook it in a low oven for ages, checking on it every couple of hours. If the fluid is getting a bit low, add more stock or water.

At the moment been shin or skirt makes an ace casserole for us.

Make enough for two days - cheap and very cheerful. If you don't care for leftovers, the pep up the remains with different seasonings (say, classic casserole to a beef chilli, or curry, or rendang for the second day.)


Roast a chicken - a roast dinner, plenty meat left over for salads/cold cuts, and the carcass and any nook and cranny meat into the pot to make stock. Stock can become chicken soup.

Slooooowly roast pork belly. The fats render to deliciousness. A gammon joint isn't very expensive. A gammon hock, roasted makes for a delicious meal, although leftovers can be a bit gristly . However, the leftovers and bones can go into the stock pot and turned into wonderful stock for soup. In making the stock, the ligaments and tendons that tend to be gristly, just disappear into a fantastic stock.
 
We do a lot of slow cook dishes which you can stuff with vegetables to bulk them out. How do beans impact your BG lebel? Chilli can be made in bulk and adding kidney and baked beans means it goes further.

Tonight we had butternut squash, cabbage and chops - yummy. Tomorrow a higher carb day with squash risotto.

Roast chicken gets us 3 days of meals - lots of veg again.
 
Cabbage is great sautéd with any cheap cut of meat and is usually inexpensive.
Ground meat, (pork, lamb, or beef) can be made into meat balls, patties or browned. Yummy with some grated cheese.
Low carb does not mean expensive.

For chilli, if beans are tricky, for whatever reason, black olives give a similar mouth feel and appearance. There don't need to be too many in there.
