why do the recipes only have the carb content and not the sugar content. I am trying hard to get my blood sugars down but need to know sugar content of food

It is better to look at the total carb figure than the 'of which sugars', because it all ends up as sugars in the blood when it has been digested.
The only difference between brown rice and white rice, and potato and table sugar is the speed they digest - and sometimes even that difference is small.
