Sugar spikes 2 or more hours after eating

This always confuses me as my sugar spikes at the 1.5/2 hour mark no matter what I eat, so the rule of ‘under 8.5 two hours after eating’ never applies to me. Surely then I would be looking at under 8.5 three hours after eating based on when my spikes happen (I wear a libre 2 so know this is my response to all food).

Everything I read says eat foods that take longer to digest as your body can respond to the sugar better, but do I want foods that spike me faster???

Everybody is different and not everybody has the same diet.
Rules are generalisations, so I take this more as a guideline which applies to most people and for most foods.

And when I got my libre I discovered that one of the late meals I was sometimes taking was causing my levels to be well within the acceptable range after two or even three hours, but went out of range after I went to bed and I was spending half the night over 10.
 
I follow a 16:8 eating plan and try not to eat past 8pm at night. My last ‘meal’ of the day is a bowl of Greek yogurt with some seeds, nuts and homemade (sugar free) applesauce. This doesn’t tend to spike my sugar and remain fairly stable throughout the night. My carb heavy meal is around 3-4pm and I have anywhere between 30-60 grams of carbs. It doesn’t really matter where the carbs come from, I will see a large spike around the 2 hour mark after the meal. I suppose the trial will be to see if it’s the amount of carbs rather than the type? Not sure. Have had type 2 for 17 years and never really knew how my body was reacting in real time until I got the libre a couple months ago. What an eye opener it’s been. HbA1c is around 59, so am trying to get it lower. Also only on metformin and dapagliflozin and work out 5 times a week. Diabetic nurse wants me back on gliclizide (came off in January) but it made me gain/hold on to so much weight. Since coming off I’ve lost 20 pounds without changing any habits! I just feel I’m one of those people who will need meds no matter what I do!
