Here's a good one:
Lo-Carb Pancakes!

1egg
75g (approx.) Cream Cheese
Sweetener to taste. (or leave out for savoury)
Blend together the egg and the cream cheese with a Stick Blender, and fry for a couple of minutes each side in a little butter/oil in a shallow frying pan/crepe pan.
Add the fillings of your choice.
You'll be surprised!
(I made a thick one last night by adding ground almonds to the mix. It wasn't bad - bu tI think I'll add LESS ground almonds next time. Turned out a little dry).
