suitable for a packed lunch

I have my DESMOND meeting tomorrow, and need to take with me a packed lunch. Anyone got any ideas? not sure what facilities are available so preferably something that doesnt need refridgeration or cooking/heating. I dont like salad :(

You're not leaving us with masses of options, are you? :)

I sometimes make ratatouille and take it with me, cold, in a Tupperware-type container. It won't go off in the course of a few hours, so doesn't need refrigeration, and I also take a slice of Burgen bread with me, buttered.

Other possibilities: cheese; cold meat (maybe all-meat sausages, which are often very low carb); a slice of frittata; cole slaw (unless that counts as a salad in your book); a bit of dark 85% chocolate for pudding?

Or pop into the nearest Maccy D's (joke :))

I'm having one of my to-go lunches now, as I'm trying to multi-task and didn't want to do any cooking or prep.

I'm having a couple of Babybel cheeses and some peanuts. If I'm taking that with me, "just in case", I'll use a small clip top container. As the cheese is wrapped in both cellophane and a wax coating, it doesn't go at all slimy, even if it warms up a bit. I usually have a pot or a small bag of salted peanuts in the driver's pocket in the car, and in my handbag then I know I'm never going to be utterly stuck, and hungry.
 
Or a couple of eggs mashed in mayo with some cherry toms and cheese, or toms with a tin of mashed salmon with cheese (some mayo in a separate container) All you need is a spoon.
 
What don't you like about salad? I absolutely hate lettuce but being wheat intolerant limits my choices. The lunch I take to work contains:
  1. A protein element - ham, cheese, egg, smoked salmon, crustless quiche with all pastry cut off, cold sausages
  2. tomatoes
  3. cucumber
  4. sugar snap peas
  5. radish
  6. spring onions
  7. sometimes grated carrot
I cut this all into small pieces and mix together - this avoids the need for a knife and as it is mixed together you don't have the feeling of it being lots of salad.

I make it up the night before and take it out of the fridge in the morning. I don't keep it in a fridge at work as it is better not cold.

Sometimes even when you think you don't like something, by preparing it in a different way makes it palatable.
 
Fionamarie, been there done that ,now you have plenty of time to get your packed lunch ready ::))
 
I'll be interested to know your reaction in the tea break as you munch your lunch and everyone else eats the biscuits provided. It did bring home to me that it's Us and Them. No hard feelings, just a bit sad.
I took some almond flour cheese bites which look like biscuits anyway.

@DeejayR can you point me in the right direction for the receipt for the Almond Flour Cheese bites... my NY Resolution is to try out some of these fab recipes.. and you often mention the cheese bites and I think this could be something my culinary skills could copy with.
 
why not really upset the dietician and take coconut, avocado, chicken thigh or other fatty meat, carrot batons, chocolate, nuts and a big lump of cheese ;):happy:

I copied this from the forum so thanks to whoever it was who posted it first. If you use fine-ground almond flour it comes out pretty solid but you only need a bit to feel you've eaten something substantial.

Cheese and Almond Bread
Makes 1lb loaf

10 1/2 oz (300g) ground Almonds
1tsp baking powder
2oz butter
5 1/2 ozs (155g) grated cheese
3 beaten eggs

Combine all ingredients in food processor or bowl, quite a stiff mixture, place in loaf tin.
Bake at 180º 50mins

My wife made me some mozzarella on tomato slices with some sprinkling of black pepper and olive oil on top. Very nice indeed.
