Sunday carvery advice?

Hi, I was diagnosed Type 1 just over a month ago and I am on Metformin. Not currently using insulin as I was told my glucose levels aren't high enough yet for insulin treatment. With it been father's day soon my wife and kids have booked for a Sunday carvery which I usually love and chuck abit of everything on my plate but i'm not sure what I could have on my plate with my new diagnosis. Any advice would be greatly appreciated!
 
Loads of meat.
Any vegetables which are from above ground e.g. cabbage.
Sadly, avoid roasted potatoes, parsnips, and any other root vegetables.
However, fill up on the delicious meat and enjoy!
 
Hi @shaunjc780 and welcome to the forums.

Have you been given any dietary advice? Normally T2s with insulin resistance do well by reducing their carbs but am not sure what your team are working on with you? Do you know whether you have any insulin resistance and/or reduced insulin production? At 29 I would assume (quite possibly incorrectly) that you have the juvenile form of T1 rather than slower acting LADA, but the fact that you aren't yet on insulin contradicts that slightly.

In the long run I would expect you to be able to inject for what you want to eat but without any external insulin to help then going lower carb makes some sense.

Hopefully your team have given you some method to test for ketones so that you'll know when to go back for insulin?
