Sweet Potatoes Yay or Nay?

Today MH has had sweet potato wedges with homemade beef burgers (no bun). They were seasoned and tossed in olive oil.

I was loathe to let him have much as, this afternoon, I goggled them and got a lot of conflicting nutritional values. It'll be 7pm before we can test him to see if he's had a spike from them as he's just this minute finished eating.

Could some practised low carbers give me their opinions on sweet potatoes?

Sweet potatoes raise bg much less than the regular ones. I use them occasionally and make a mash of them with celeriac.

I have found sweet potatoes a really good idea so far. Nice low readings, even after delicious mash! Better than normal mash in taste too! :D
 
Can you ever get them to go crispy as roasties? I find they are always soggy!

Ali, the wedges were quite crispy - that's possibly down to cooking them on a metal baking tray, plus my oven heats from the centre bottom and will burn anything on the underside if I'm not careful!

Quickly notes down sweet potato's after buying my first celeriac today. If nothing else, diabetes is making me try foods I wouldn't have tried before.
 
I love celeriac! peel it, cube it into one inch sort of size cubes, boil it in lightly salted water until soft, then puree it with a knob of butter, a splash of cream and season with freshly ground pepper and a little more salt if desired. Serve it with chicken done whichever way - there's something very special about celeriac and chicken together. Uber numminess! I like it better than mash and I really used to love mash.

Anyway.....main point MH's post dinner reading after eating quite a large amount of sweet potato wedges was 5.5. He also had about 4fl oz Chateau Neuf, left from a few birthdays ago, so that may have helped!

Does it taste of celery Julia? I cannot stand that stuff!
 
I was going say it tastes more like braised celery.....but if you don't like celery, you may not have tried that either :crazy: I'm probably a bit biased as I love anything celery. It doesn't taste exactly like fresh celery; the closest I can get is a cooked, milder, celery flavour crossed with mashed potato. I'm not sure if that's any help to you really, but if you've bought one, why not give it a whirl?

I haven`t yet, but I might well do next time I`m in Lidl :wink: Goodness knows my family is big enough to eat it if I don`t.
 
The carbs in sweet potato are similar to normal potatoes but it is lower on the glycemic index, I like mine roasted in the oven with garlic & herbs sprinkled over the top.
