Sweeteners

Yesterday I made a gorgeous chocolate cake. It used a Splenda type sweetener but I used Aldi's own sweetener. I had a tiny piece of cake, but this morning - after supper last night, cleaning my teeth & using mouthwash twice - I can still taste the after-taste of the sweetener. It's 'orribible.... :silent:

......can anyone recommend better sweeteners with less of the after-taste, please? Thank you :D

I never use sweeteners in any baking I do, I put in half the recommended amount of sugar and leave the rest out. I have used this method for sponge cakes and fruit cakes and it works well. I also checked this out with my dietician and she says it's OK. I use sweeteners for custard but add it after the custard is made - but not too much of it.

I use sunflower spread and get excellent results when I make pastry and cakes. Both pastry and cakes come out far lighter than when I make them with the normal fats.

But using half the amount of sugar means the cake isnt low carb any more?

What kind of sweetener is it that you got from Aldi? Same as Splenda? I dont use Splenda for baking, definitely not for chocolate cakes or truffles, etc, it doesnt seem to go well with anything chocolatey, its ok for other cakes though.

For chocolate cakes I use Zsweet, I find it gives the best results and definitely no after taste.
 
Thanks SueR....I had toyed with that idea but we are trying to be serious about the low carb until we get the BG levels sorted and find out what will produce highs or spikes.

WhitbyJet, I'll try the ZSweet - I've just been shopping and I've got some Total Sweet Xylitol so I'll play with that too.

If I make a cake, I make it as a treat and I certainly don't worry about it being low or high carb - it is a treat after all. I rarely make chocolate cakes.

I buy my sweeteners from Tesco and I never use them for baking. I do add a small amount to Bird's custard and it works well, if you make the custard and let it cool for a few minutes before adding the sweetener.

You get used to not having cakes and biscuits and so when I make cakes we enjoy them even more.
