Hi everyone

I saw a low carb cake recipe that calls for 3/4 cup erithratol but I would rather use coconut sugar. Is that too high Carb?

Coconut sugar has exactly the same effect on my BG as normal sugar. My husband eats a Paleo diet so he uses coconut sugar if he bakes.

Ok great thanks. I was wondering about that 100 % stevia stuff that is new In tesco it say has zero effect ok bs but is that healthy ?

Make the cake with a little honey? It's basically fructose, which is a low glycemic..
This what Jason Fung (nephrologist and diabesity expert) has to say about fructose,
Fructose is even more strongly linked to obesity and diabetes than glucose. From a nutritional standpoint, neither fructose nor glucose contains essential nutrients. As a sweetener, both are similar. Yet fructose is particularly malevolent to human health compared to glucose due to its unique metabolism within the body.
Have a look at Jason's blog here, https://intensivedietarymanagement.com/fructose-fatty-liver-insulin-resistance-t2d-28/
