When I have needed to sweeten something like the fruit puree that I make with frozen fruit ...that is so sour.. I have always used sugar then I freeze in little pots and have it with plain greek yogurt
Now I am prediabetic I think I should use a sweetner instead . I would prefer not to use an artificial sweetner as I have heard they are not very good for you so I would like to use something more natural like Stevia but I also wondered if any of you use Agave syrup as I have heard this is ok for diabetics

Usually, the sweetener will say on the packet what ratio to use. Truvia says "1/3 teaspoon sweetens like 1 teaspoon of sugar". But from personal experience, I find even that is far sweeter than sugar (and has a bitter aftertaste)
Perfect Sweet (xylitol based) has a 1:1 ratio, so can be weighed out like sugar. This is my preferred brand for baking.
They all work out differently though, so you do have to read the packets carefully.

Apparently Perfect Sweet is now called Total Sweet o_O

Does anyone know how much Stevia (tesco own brand) is needed to substitute in recipes instead of sugar? I really wanted to make a cake at the weekend but despite looking on the Internet for hours I couldn't find the answer - hence no cake. All I want is for something which confirms how many grams of Stevia should be used for say 50gms if sugar.

I have Hermesetas granulated Stevia. On the label it states that weight is 1/10th the weight of sugar, or 10 times lighter.
(ie 50grams of sugar = 5grams Hermesetas Stevia Sweet)
By volume it is equal to sugar (ie One cup of sugar = 1 cup of Stevia.)
I'm not in UK so don't have Tesco brand though.
