T1 Recipe for YUMMY HIGH FIBRE HEALTH BREAD FOR KIDS

If any other parents are battling to get fibre into their T1 kids here is a winner of a recipe. It is high carb but because of all the roughage it is a lovely slow carb too. Max has this for his snack in the morning and it carries him through daytime playtime and sport beautifully with no spike.

In a great big bowl mix the following in no particular order...

500ml wholewheat flour
500ml nutty wheat flour
100ml wheat bran or oat bran
50ml unrefined brown sugar
500-750ml plain yoghurt or sour milk or buttermilk or any other milky liquid - thicker use more, runnier use less, we use no fat/lo fat
10ml bicarb of soda

mix it all up and to this you can add pretty much anything such as;
250ml grated carrots and a handful of raisins for carrot loaf
Mixed dried fruit
Dried cranberries - favourite in our house
150ml mixed seeds

Bake at 180 degrees c for about an hour - we leave ours a little longer - till a knife comes out cleanly

The recipe makes 2 fairly large loaves.

I have no idea how many carbs per serving but it doesn't spike Max and his BG is nice and steady right through the part of the day when he runs around the most. It also gives a wallop dose of roughage and his little tummy works like clockwork. We also have to send extra to school for all the friends.
