Can someone please explain or rather solve the riddle presented by my unusual bg readings today. FBG 5.9 in the morning, Propradial 13.7 after breakfast of boiled unripe plantain and generous portion of avocado including some drops of coconut oil. Just a little while ago RBG drops to 4.3
Isn't plantain about 1/3rd starch, by weight?
That is going to have a high impact, first raising blood glucose and then - due to the release of insulin, eventually causing a rapid drop.
Is there nothing you could eat instead?
