Hi Rich,
I like Chinese food as well but unfortunately it is quite difficult to eat Chinese and remain low carb. The rice, whether boiled or fried, is plain rice and extremely hugh in carbs. Noodles are also high carb. Nearly all Chinese sauces are made with high quantities of monosodium glutamate, also very high carb. The lowest carb chinese meal I have found is foo young, which is effectively a Cantonese omelette and has no sauce. I also love Szechuan dishes - if they are made properly. They are much spicier that most Chinese dishes, and they are a speciality at my local takeaway, but unfortunately in many Chinese restaurants they are covered in the usual MSG wallpaper paste!
