Tapioca pudding

Hello. My wife was planning of making home made tapioca pudding for christmas dinner desert. It has 3.5% milk and whipping cream for the liquids. Also using splenda brown sugar to sweeten. Does anyone know what the GI is of the tapioca its self? I will probably have some no matter what but don't want to go overboard.

Tapioca is high GI at 85 and has 22 g of carbs per 100g. I used to love tapioca, semolina, rice and other milky puds but my BG absolutely shoots up when I eat any - but you might be different - some of us can tolerate things that others of us can't. Experiment on yourself - take your BG just before eating and then again at 1 hour and then 2 hours after eating. Good luck!
 
You might consider chia pudding instead. There are lots of recipes out there for it.

Same here with school dinners, I remember "Frog Spawn" with great distaste.

Semolina was little better, at least it had a dollop of some jam on it to make it more palatable.
