ive recently been using oomi noodles and assumed their 7g carb count would be fine as long as they were paired with a something like a mushroom and cream sauce that would be a v low carb addition- I was wrong!
Sugars have been a bit higher than Id want over recent weeks so I started testing individual things again to see how much they spike my sugars - for me 3 point spike is about my limit of acceptability.
Todays set of foods to test included Oomi noodles.So breakfast consisted of 1 of the single serving packts - sadly they spiked my sugars by nearly 5 points
That puzzled me for a 7g carbs item, but then I noticed the sugar in the ingredients and also wondered if the high protein had an effect via gluconeogenesis. As itd had no carbs for 16 hrs.
Hey ho back to Konjac noodles, assuming they pass the test, if not itll have to be more outings for me and my spiralizer up a courgette mountain

I would be wondering about a food intolerance...?

Re the gluconeogenesis, I usually find that kicks in later (protein being a slower digestive process). When I have seen it on my Libre screen, it usually kicks in around 3 hours, and can last a while, depending on the size of the protein portion. For instance, a huge steak has raised me from the mid 5s to the mid 6s and kept me there for over 12 hours. But the rise didn't happen til after the 2 hour mark.

I'm fine on Konjac, so I hope you are too!
 
The question of food intolerances in a really interesting one and something I think is massively under researched
I was tested for food intolerances in my early 20's ( mixture skin testing and exclusion diet) - I lost 6 stone in 5 months on the exclusion diet even tho calories increased and came out with a diagnosis of intolerances to a fair few things, most were at the high carb end of the scale, tho not all.
I read a lot at the time about food intolerances and came across quite a bit of American stuff linking food intolerances and diabetes so I raised to question of whether there was a link when I was diagnosed with type 2 in my 30's - the diabetes team medics basically scoffed at the idea. Given that the same medics also told me Id been diabetic for at least 15-20 years prior to diagnosis, which would overlap the period in which I was tested for food intolerances, I was never totally believing of their views
Hope the big spike is a one off reaction to this particular product and that Ill still be ok with Konjac
I noticed youre better with gluten free pasta - have you come across the 'explore Asian' range? - they make Spaghetti from beans which is rather good - Ive only had it once at a friends and it didnt seem to cause any problems - think ill get a pkt and include it in my testing experiment. This is a link giving info on one variery - they also do edemmame ( the one I had) soy and mung bean varieties
