ive recently been using oomi noodles and assumed their 7g carb count would be fine as long as they were paired with a something like a mushroom and cream sauce that would be a v low carb addition- I was wrong!
Sugars have been a bit higher than Id want over recent weeks so I started testing individual things again to see how much they spike my sugars - for me 3 point spike is about my limit of acceptability.
Todays set of foods to test included Oomi noodles.So breakfast consisted of 1 of the single serving packts - sadly they spiked my sugars by nearly 5 points


That puzzled me for a 7g carbs item, but then I noticed the sugar in the ingredients and also wondered if the high protein had an effect via gluconeogenesis. As itd had no carbs for 16 hrs.
Hey ho back to Konjac noodles, assuming they pass the test, if not itll have to be more outings for me and my spiralizer up a courgette mountain
