Hi, I’m newly diagnosed and trying to get my head around it all. My question is this, I’m going to Turkey next week and have to start testing my levels from tomorrow, am I able to take lancets in hand luggage as not taking suitcase?

Yes, you should be fine. Never had an issue carrying lancets.

So do I have to declare they are there or put in the tray when going through security?

I just leave mine in my bag.

I've never taken any of my kit out going through security. Obviously all the required stuff goes in the poly bag, and laptop, iPad and so on come out for scrutiny.
