Trouble digesting fat

This is not a diabetes related question per se but I figured someone here might know.

My husband seems to have an issue digesting fat. I convinced him to ditch carbs for a week and eat the usual meats instead. Today we shared pork belly. I don't think he had anymore than I did, but he has belching and feels a bit queasy and said he usually eats bread and yoghurt to absorb the fat so now he's on day 3 of no carbs it's hard to digest for him. But he said it's always been like this for him with fats.

There is one new thing we've eaten which might be affecting our digestion - psyllium husks, which are in a keto bread/cracker that I've been making to go with a chicken liver pate. But the belches taste like pork fat tonight, he said.

Is this a temporary thing when you go low carb or if he feels he's always had this problem, are there some other health problems that might cause fat digestion issues that we could look into?
 
If he's gone from a carby way of eating to a full on carnivore approach he may well do better to introduce fats in a more structured way.. maybe bacon then steak then pork belly. I've been carni for a year now but still sometimes pork belly can give me a bit of gastric disturbance. I tend to go more for chops or slow roasted shoulder and have my belly as bacon.
Psyllium husks could also be the cause.. I'd drop them and see.

Unless your husband has metabolic syndrome and/or glucose dyregulation there is absolutely no need for him to go Full On LCHF. He can just go as low as he (and his digestion) like, or he can start gently and gradually go lower carb and higher fat over several weeks.

Many people are 'put off' this way of eating by going to Gung Ho and encountering the typical digestive changes that would occur with any major diet change, whatever that change may be. Whereas if they made the changes more slowly, adapting and developing new tastes, they are more likely to take to it like a duck to water.
 
BB said "Psyllium husks could also be the cause.. I'd drop them and see" I got quite strong stomach pains from this fiber type, presumably its due to a certain protein . I changed to Acacia fiber and no problems at all.

Acacia fiber is a type of soluble fiber harvested from the sap of the Acacia tree, which is native to parts of Africa, Pakistan, and India. Soluble fiber, as part of the diet, can help to encourage intestinal regularity.
